I thought that you might like a recipe from my last workshop as these truffles are very healthy, rather delicious and make a great Christmas present. All the ingredients have nootropic properties. Nootropics are a class of medicines called “Smart drugs”. They help our brains to function optimally, supporting cognition and helping us to feel calm, focussed and alert.
Ingredients:
1 small cup of cacao
1/3 cup of coconut oil
A teaspoon of nettle seeds
A small bowl of crushed walnuts
Fresh turmeric and ginger root.
Grind of black pepper.
¼ cup of Honey
¼ cup of water
Oatly cream
Method:
A small knob of ginger and turmeric – scrape off the skin and slice very finely, then chop into tiny pieces. Drop into a thick bottomed saucepan
Add ¼ cup each of honey and water, plus a good grind of pepper.
Simmer very gently for about 30 mins, then place the crystalized roots and syrup in small bowl and keep to one side. You will have a toffee like consistency.
Don’t wash the sauce pan, but place this into a frying pan half filled with water so that it forms a bain-marie.
Turn the hob onto a low heat and melt the coconut oil.
Slowly add your cacao powder – you may not need the full cup of cacao, and mix together until you get a very thick paste.
Add 2 – 3 tablespoons of Oatley cream to give a silky consistency.
Add 2 tsp of nettle seeds.
Now, take your very thick paste, and roll into truffle balls, then roll around a bowl of crushed walnuts to coat.
Place on a plate, and continue until you have a plateful of chocolate balls.
Place in the fridge to set.
